Cooler weather calls for a warm, wholesome, and flavorful meal. When the days are short and the nights are long and cold, nothing is more comforting than a big bowl of nourishing stew. Healthy, hearty, homestyle! This warm, cozy, fragrant stew is one of our favorite meals to enjoy during weekdays. The beef stew is tender, rich and fragrant making it very hard to stop scooping up by the spoonful. The trick to getting extremely tender meat pieces is to cook the stew slow on low heat for a long time.
It is not hard to get the perfect fork tender meat and vegetables pieces in every bite. The cooking just takes a little time. Just as everything in life requires time and patience to achieve perfection. Speaking of perfection, the process of achieving the soft smooth taste of FIJI water also takes time and care.
Fiji artesian water comes from a protected artesian aquifer found deep underground in the remote Fiji Islands, a naturally formed underground chamber consisting of layers of permeable volcanic rock. The water trickles down through the layers of volcanic rock over time and gathers minerals and electrolytes along the way that create FIJI’s signature soft, smooth taste. In a similar fashion, slow cooking the meat and vegetables brings out amazing flavors and scents as the ingredients tenderize and mingle in the stew.

রেসিপিঃ বিফ স্টু
২ পাউন্ড স্টু মিট (হাড় ছাড়া গরুর মাংস)
৪ টেবিল চামচ ময়দা
২ ১/২ চা চামচ লবন
১/২ চা চামচ গোল মরিচ গুড়া
২ টেবিল চামচ তেল
৪ ১/২ কাপ ব্রথ
১-২ চা চামচ লাল মরিচ গুড়া
৬টি রসুনের কোয়া
১ টি এক ইঞ্চি সাইজের আদা, খোসা ছাড়া এবং লম্বা ফালি করা
১টি ছোট দারচিনি
১ টি তেজপাতা
১ চা চামচ থাইম, অতিরিক্ত কিছু উপড়ে ছিটিয়ে পরিবেশনের জন্য
১টি ছোট পেঁয়াজ, খোসা ছাড়ানো এবং কুচি করা
১ প্যাকেট (৮ আউন্স) মাশরুম অর্ধেক করে কাটা
১ টি মিডিয়াম সাইজের আলু, খোসা ছাড়ানো ও ফালি করে কাটা
১ টি মিডিয়াম সাইজের মিষ্টি আলু, খোসা ছাড়ানো ও ফালি করে কাটা
২ টি মিডিয়াম সাইজ টারনিপ (শালগম), খোসা ছাড়ানো ও ফালি করে কাটা
২ টি মিডিয়াম সাইজ গাজর, খোসা ছাড়ানো ও ফালি করে কাটা
প্রস্তুত প্রণালীঃ
১. স্টু মিট ১ থেকে ১.৫ ইঞ্ছির মত কিউব করে কেটে নিন। ভাল করে ধুয়ে মাংস পেপার টাওয়েলে দিয়ে পানি শুষে নিন।
২. একটি বাটিতে ২ টেবিল চামচ ময়দা, ১ চামচ লবন এবং গোলমরিচ মিশান। ময়দার মিশ্রণটিতে মাংস মিশান।
৩. বড় হাড়িতে মাঝারি তাপে তেল গরম করুন। মাংস গরম তেলে দুই বা তিন ব্যাচে ৪ থেকে ৬ মিনিট ভেজে নিন যতক্ষণ না বাদামি হয়। হাড়ি থেকে মাংস নামিয়ে রাখুন।
৪. হাড়িতে ১ কাপ ব্রথ দিন। হাড়ির নিচে লেগে থাকা খাবারের কনা গুলো ভালো করে নেড়ে আলগা করে নিন। বাকি লবন, লাল মরিচের গুড়া, রসুন, আদা, দারচিনি, তেজপাতা এবং আরও ৩ কাপ ব্রথ দিন। মাংস হাড়িতে দিয়ে চুলার তাপ কমিয়ে দিন। মাঝে মাঝে নেড়ে দিন এবং অল্প আচে প্রায় এক ঘণ্টা রান্না করুন।
৫. এর মাঝে অন্যান্য সবজি গুলো খোসা ছাড়িয়ে ধুয়ে, কেটে নিন। কাটা পেঁয়াজ, গাজর, শালগম, আলু, মাশরুম স্টুতে মিশান। ঢাকনা দিয়ে আরও ১ ঘন্টার মত রান্না করুন এবং মাঝে মাঝে নেড়ে দিন যতক্ষণ না মাংস নরম হয়।
৬. বাকি ২ টেবিল চামচ ময়দা এবং ১/২ কাপ ব্রথ একসাথে গুলিয়ে নিয়ে স্টুতে মিশান এবং আস্তে আস্তে নাড়তে থাকুন।
৭. স্টুর ঝোল একটু ঘন হলে নামিয়ে নিন।

I always find it very hard to get a tender cut of beef for my kids here!! it takes ages for it to cook to perfection for their little teeth :). Nice recipe, thanks for sharing Lail.
For Bangladeshi style cooking, I usually use a pressure cooker and the beef gets tender in about 35 minutes which my 3 year old can easily eat. She enjoyed this stew very much. Have you tried Crescent meat for your kids?

Awh yeah Lail….. I heart beef stew, so delicious and defo features heavily on the winter menus at my digs, but the heat of Summer is here now, so less inclined to eat a stew. I shall bookmark for when the weather cools.
